Miss Lady O’Belle is a friend, a photographer and a sex goddess. She came over last week for a sleepover and we decided to make breakfast in bed.
She put on her cashmere sweater, and I told her we could wear my cashmere underwear, that a very beloved slave bought me, to match. She looked at me, jaw agape, and didn’t believe me that they existed until she was wearing them. Miss Lady Oh’Belle thought that she had invented cashmere underwear, when a friend asked her what the fanciest thing she could think of was. And nothing is fancier than cashmere underwear, and nothing is sweeter than breakfast in bed.
For breakfast we made arepas with avocado fried eggs and served it with blackberries, a halved grapefruit and fresh squeezed orange juice mimosas.
To make the arepas:
- equal parts masarepa cornmeal flour / water
- pinch of salt
- Mix ingredients together into a bowl with your hand. Fold the outside to the center until evenly mixed. Add more water or flour until dough is able to be formed into english muffin sized patties with out being too runny or cracking. Preheat the oven to 250 degrees. Fry the patties over medium heat until outsides are golden brown. Reduce the heat of oven to 200 degrees. Place the oven safe cast iron pan into the oven for 18 minutes. Let cool for 2 minutes.
- Cut an avocado in half, remove the pit. Cut a half inch slice from the open face of the avocado. Place in a buttered hot pan and crack an egg into each circle in the face of the avocado. Cover the eggs and let cook until desired level of runniness.
- Butter the arepa face, place the avocado and egg on top (you can remove the skin). Sprinkle salt, pepper and hot sauce of your choosing. I always choose sriracha. No matter how empty my fridge gets, my bottle of sriracha is always half full.
